To bake bread

 
General tips

The oven can be used to bake bread as well as pizza. When baking bread I like to preheat the oven well - 3 hours. The ashes and glowing embers should be removed from the oven and the baking surface cleaned. Be sure to check the temperature before proceeding. If you have a wooden door soak or spay it with water. Close the door securely and also close the exhaust pipe damper if you have one. Do not open the door for the first 10 minutes. Wait until the oven reaches the right temperature and then put the bread in using a well floured slidegate (peel). It will bake in about 1 hour in the slowly sinking heat. You can test if it is ready by knocking on the bottom of the loaf. If it makes a hollow sound it is ready. Let it cool down a little before eating. Good appetite.
