The oven opening (door)

 
Now it is time to create the oven opening. The opening must accommodate the placement of firewood in the oven as well as baking sheets. The opening can't be too large, however, or an excessive amount of heat will be lost.

The form for the opening is cut from polystyrene (Styrofoam). A second identical form is created from wood and the two are joined to make a more stable form. On the polystyrene draw a mark all the way around the arch 6 cm (2 3/8 inches) from the edge. This will serve as a guide to line up the soil form you will make for the dome portion of the oven. The oven opening form should be securely fastened in place. For this I used a square timber and a clamp (see photos).

 
 
The oven opening form can be used later to make a door for the oven if you desire to use the oven for baking bread. For pizza no door is necessary.The door is necessary for baking bread because it allows heat to be trapped in the oven after the fire is removed. This is the ideal way to bake bread in the oven. If you preheat the oven for 3 hours you can remove the fire and have up to 2 hours of baking time for bread using the accumulated heat. My oven has a wooden door which works perfectly but a metal door can also be used if you have a way to fashion one.
